Remember a while back in January when I decided that it was time for me to change up my current hobby and become a cake decorator? No? It’s OK. You can see how it happened right here. I had great expectations for myself that I would easily pick it up and perhaps be so good by Chris’s birthday that I could build him an elaborate cake (using fondant, even!), perhaps in the likeness of a fish since he was born under the sign of Pisces (I thought it would just be funny…!) Anyway, Chris’s birthday came and went last week and I have no proof in the pictures of any fish cake that he enjoyed…HOWEVER, I do declare that what I did make for him came out pretty darn good, if I may say so myself. I guess you could say that I’m starting out small. Here’s a look at the cupcakes that I made to ring in my man’s thirty-something (th) year!
Chocolate Butterscotch Butter Cream Cupcakes!
I used the same chocolate cake and butter cream frosting recipes that I used when I made my Cupcakes Are For Girls cupcakes and simply changed the flavoring for the frosting from cherry to butterscotch. AND, what you can’t see from just looking at them is that there is a gooey surprise on the inside.
Butterscotch Pudding Surprise!
I snuck some butterscotch pudding in there!! I know! I couldn’t believe it either! After they were cooled, I used a one-inch tube that contains our oil thermometer and took a bit of the inside out and replaced it with pudding that I squeezed out of the corner of a gallon-sized zip lock bag! Oh, and that’s half of a Rolo placed up on top.
I mean to say, this is a fun new adventure I’m on! If I don’t create more first, my next plan is to make Red Velvet Cupcakes for our sweet babysitter’s 18th birthday. It’s the least I can do! She’s been with us for 7 years and is headed to college sooner than I like! Hmmm…graduation cupcakes, too? Ok, I’m in!
