I was offered this dish a few weeks ago at a friend’s house to go along side a cup of coffee. It was the perfect breakfast to coincide with the onset of fall. Cinnamon, apples, brown sugar…so comforting, so warm, so Autumn. I asked right away how this yummy concoction came together and she told me that it had come from a friend of a friend, but that it is super easy. And by easy, she meant throwing the ingredients into a crock pot and coming back four hours later. The following is my rendition of Apple and Granola Breakfast Cobbler. But, listen, I’ll let you in on a little secret that I would give away at the end of this anyway, but, not only does this make a fabulous breakfast, it makes an even more fabulous dessert! Yes! It’s true! Read on…
Here’s your ingredients:
Four Granny Smith apples
Granola cereal
(Peel and slice the apples, by the way.)
Light brown sugar
Cinnamon
Lemon juice
Butter
Now, here’s how you assemble it:
Place the sliced apples in the bottom of your crock pot.
Sprinkle the cinnamon, brown sugar and lemon juice on top of the apples.
Add your pieces of butter.
Add the granola and mix together.
Let it all cook in the crock pot for four to six hours and don’t feel bad if you keep coming back to stir…the aroma that sneaks out every time the lid comes off is better than any seasonal scented candle!
If you are enjoying the cobbler for breakfast, add a spoonful of vanilla yogurt and dry granola.
But, if you have some cobbler left over from breakfast and you want a decadent dessert, throw on a couple scoops of vanilla ice cream and a drizzle of caramel! Mmmmm!
I may just prefer the after-dinner variety of this dish the best, but that’s just me!
Apple Breakfast-Dessert Cobbler
4 Granny Smith Apples, peeled, cored and sliced
1/2 cup packed, light brown sugar
1 tsp. cinnamon
1 tbsp. lemon juice
2 tbsp. butter, cut into small pieces
2 cups granola
Place the apples around the bottom of the crock pot then top with brown sugar, cinnamon and lemon juice. Stir in butter and granola.
Cover and cook on low for 4 to 6 hours. Serve hot with additional granola and vanilla yogurt for breakfast. Or, serve hot with vanilla ice cream and caramel drizzle for dessert!
