I just need to make note of my lunch today. Silly perhaps, but not necessarily when you consider that it was 1. From a food truck and 2. My first Banh Mi sandwich in my life. I brought the boys to the Cherry Creek Farmer’s Market after picking them up from an overnight at Grandma Judy’s house. I went to the market with the sole purpose of picking up some peppers and zucchini for grilling tomorrow. Well, believe it or not, the produce that I almost bought didn’t look that great! I was surprised. But, the variety of other items sold at this market and items available for viewing far made up for it.
My boys learned how Hatch Chilis are roasted. I love that smell!
We saw the largest offering of Paella I’ve ever seen in my life-not that I’ve ever seen even one offering of Paella in my life! Those are mussels in there! Wow!
The guys enjoyed a reprieve from the heat by this fountain. Phew!
Out of three food trucks lined up, I chose this one, Chef Driven, because they sold Banh Mi sandwiches.

I’ve been interested in tasting a Banh Mi sandwich ever since Nom Nom truck was a runner up in season one of The Great Food Truck Race. The sandwich is often known as a Vietnamese Subway sandwich. It is made on fresh baguette with usually shredded pork or tofu and topped with pickled carrots, thinly sliced cucumber, daikon, cilantro, chili peppers and seasoned mayo. It was fresh, the pork was tender and it was bursting with flavor. I loved every bite!
