Food Trucks: Just one more thing

As if I couldn’t leave well enough alone. I have to come back and make one more quick mention in regards to food trucks everywhere…but more specifically to the only notable (according to me) one in the city where I live. The Food Network has given the opportunity to people like you and me to vote for our favorite local trucks and to my delight, Coco: The Colorado Springs Cupcake Truck, has found itself in a spot on Food Network.com. As of this moment, 6:39 a.m., its is rated number 10 on the national leaderboard and is sitting on the front page of their truck feature! Pretty cool! Good job, Coco! I feel very fortunate to say that I have tasted cupcakes from this truck on a few occasions and have been very impressed! She (the truck is given a female persona) travels to certain areas of the city Wednesday through Saturday each week offering special flavors of the day that in the past have included Banana Cream, Maple Bacon, Margarita and Pretty Pretty Pink Princess. Standard, daily flavors include Chocolate Overload, Vanilla Party, Colorado Snowball, Rockin’ Red Velvet, Pikes Peak Pistachio, Zippy Lemon and Mile-Hi Mocha. We’ve had the pleasure of tasting all the standards as my husband, in his excitement, bought one of each during our first truck visit. We have since tasted special flavors of the day including the Banana Cream and Margarita. The margarita is sprinkled with sea salt! Our favorites are the Vanilla Party, Colorado Snowball and Pikes Peak Pistachio.

Eli means business when it comes to eating these cupcakes. They are that good! I had the same picture taken of me, but somehow, it just looks cuter on kids! (hehe!)
