Ok, I know. It’s a little past mid week – but no matter the day, its always nice to have something new to snack on! Especially when it is home-made and baked in the oven! This week while I was putting together my grocery list Monday morning, I happened to also be perusing some of the baking blogs that I enjoy when this snack caught my eye! And, it couldn’t have appeared to me at a more perfect time! I simply continued my list, but just added these simple four ingredients! But first, let me just tell you what it is! This muffin recipe appealed to me especially because of its small number of ingredients. I finally got to it this afternoon and here’s how Eli and I put them together! P.S. We added a fifth ingredient – one we can hardly leave out when it comes to baking. You’ll see!
This is what we needed:
I was so eager to use cake mix to make muffins! Who knew you could do that? Well, Bridget did, I guess!
I sure could hardly find pumpkin two months ago, but its out in full force now!
Half a cup of fresh cranberries.
Fascinating, right?
The whites of two eggs, whisked until whitish and fluffy. (Ooops! How’d that cranberry sneak back there?)
My apprentice! (He was waiting for our secret ingredient…)
Combine the cake mix and pumpkin in a medium bowl.
Add the cranberries. Psst! Do you see that? Up there in the right hand corner?
Yes! Chocolate chips! Our secret ingredient! We can’t resist the scrumptious little morsels!
“Please Mom? Can I just eat this whole bowl, I promise…that’s all! But then maybe just one more after that?!”
Ok, I let him have a couple – but the rest went in here! Mix gently along with the egg whites.
I made standard size muffins but then also these here minis!
They are perfect for Logan’s lunchbox and Eli’s small hands for a mid-morning snack!
These are fabulous! Thanks again to Bridget for this fun and oh-so-easy muffin recipe! I happen to love the addition of the chocolate chips because as my taste buds are recovering from the burst of tangy cranberry, they are immediately comforted by the sweet taste of chocolate.
