We recently received the September issue of Food Network Magazine and decided on building the cover recipe tonight for dinner. Pappardelle with Corn. That’s what it’s called. I don’t know what Pappardelle is and won’t claim to – but from the photo it looks like a very wide pasta noodle. I couldn’t find any at the store, so I just used extra wide egg noodles and it worked just fine. So, I began as I usually do, thinking I’m ready to just start cooking, when in fact, I haven’t actually read through the whole recipe yet. In tonight’s case, I forgot to buy scallions, which I don’t think is something that should be left out of a recipe. If it’s there, it’s there for a reason. The recipe needs that flavor. This isn’t the first time that I’ve forgotten an item in the recipe. It happened just last week! Well, we weren’t about to run back out to the store and I remembered that my other neighbor has chives growing in her front yard. I grabbed my kitchen shears, announced I’d be right back, ran next door and clipped a handful. Chives are not scallions, but they have the same flavor profile and it worked. Finally, while prepping my ingredients, I became distracted by how beautiful a mere garlic bulb was and decided to see if I could get a good picture of it. Well, then, of course, I decided that my toaster shouldn’t be the back drop, so I threw behind it the kitchen towel, but that didn’t look right either! I looked at the other ingredients laying around and grabbed two handfuls of the cherry tomatoes, added some basil leaves, threw those down behind it and that seemed to do the trick. But, first, take a look at the hap hazard collection before it came together!
Well, Chris noticed what I was up to, gave me a hard time, and when I told him that he’d be doing the same thing, he grabbed the camera and started shooting. He’s much better than I am, so I give him the photo credit here. Look at the final shots of my garlic bulb. We’re still practicing…
Ok, so when I finally got back to cooking dinner, Chris captured most of the steps. Here, we are cooking the cherry tomatoes in butter, salt and pepper.
Then I added the garlic and white wine.
Meanwhile, we’re cooking the pasta on the side, but adding this sweet corn that was just cut off the cob after being boiled three minutes.
At the end, we added fresh basil and parmesan cheese.
You can’t believe how delicious this was. This one will cause a rift between my husband and I at lunch tomorrow because there is only enough left for one serving. You can make it yourself! Here is the recipe: Pappardelle with Corn.
