I tried my hand at building peppermint chocolate truffles this weekend and I think they came out pretty delicious! But, wow! One truffle goes a long way as they are basically very rich, very dense chocolaty goodness in one (big) bite! I got the idea for these from the 50 Edible Gifts mini book that came inside the December 2011 Food Network Magazine. They were really easy to make. Would you like to see how it’s done? Well, here you go!
You’ll need 1 cup of heavy cream.
And a half a stick of butter. You’ll bring these two to a boil and then pour over a pound of finely chopped chocolate in a bowl.
I discovered these milk chocolate chips made from Ghirardelli. Seriously some of the yummiest chocolate I’ve tasted in a long time. I could have just eaten these dipped in peppermint and called it good. But, I moved on!
After the cream, chocolate and butter are all melted together, add 1 teaspoon of vanilla.
Stir until smooth. Like that!
Unwrap about a dozen mini candy canes.
Then grind them up in a food processor.
I kept the chocolate mixture in the fridge over night to make sure that it was firm enough to shape into balls.
After rolling each piece one at a time, dip it into the peppermint until fully covered.
When you’re done, you will have a wonderfully delicious treat to share. And, believe me, you’ll want to share, because a little goes a long way!
