It’s Sunday and you may be looking for a dinner idea from me this morning. Well, I am changing it up a bit. Instead, I will provide you with a dessert idea that may just knock your socks off. No, this isn’t Knock-Your-Socks-Off-Brownies, but, it could be a close relative to it if you like super dark, rich chocolate. We do, and this was a winner for us when it all came together last night at 10:30! I came across this recipe a while back and it caught my eye, not because I like Guinness that much, but I respect it enough to know when it is good in food. This is why we have had five bottles of it resting in the back of our fridge for some time now, because we used one in a crock pot dish if I remember correctly. This was a really indulgent dessert – one you’ll need a tall glass of cold milk on the side or Vanilla ice cream on top. We chose the ice cream. Let’s get started!
Collect all of your ingredients. I tend to forget to do this, so mid-way through I am scrambling in my disorderly pantry for the vanilla extract!
Combine the flour with the cocoa powder.
Meanwhile, prepare the butter, bittersweet chocolate and white chocolate for melting.
Mix the eggs and sugar about three minutes, until light and fluffy.
Melt the chocolates and butter in the double boiler. I use a metal bowl over a boiling pot of water for my double boiler.
After the chocolate mixture is melted, add it to the dry ingredients.
Then add room-temperature Guinness. Don’t be afraid of the Guinness if you aren’t a beer drinker. You can’t taste it once it’s baked in, it just gives it a really deep, rich flavor.
Sprinkle the semi-sweet chocolate chips evenly on top of the batter before pouring into a greased pan. The recipe calls for a 9 X 13 pan, but since I don’t have one, I used and 81/2 X 11. It took about 15 to 20 extra minutes to bake (or maybe it was the altitude here in Colorado).
We decided to use some caramel squares left over from Knock-Your-Socks-Off-Brownies, to melt up with some white chocolate chips and a splash of Bourbon. Again, with just a splash, you can’t taste the Bourbon, it just gave it a really deep flavor. Yum!
Drizzle the White Chocolate Caramel Bourbon sauce over the brownie with a scoop of vanilla ice cream. Share with a friend, because it’s so scrumptious and rich that you (may) or may not be able to put it away all on your own!
