Sunday Dinner: Tequila-Lime Shrimp Tacos with Chipotle Cream

My family loves a good fish taco. In fact, Logan requested the fish that we use in our fish taco recipe for his birthday dinner! That was a surprise! So, when I noticed this recipe for Tequila-Lime Shrimp Tacos with Chipotle Cream from recipegirl.com, I felt like it was entirely necessary to give it a try as soon as possible. And we did! Read on to see how it came together in my kitchen.

You’ll need to prepare the marinade for the shrimp first: 1/4 cup Tequila; the juice and rind of one orange; the juice and rind of two limes; and a tablespoon of sugar.

Add the shrimp to the marinade and place them all in a large Ziplock bag to mingle in the fridge for up to 30 minutes.

Meanwhile, prepare the Chipotle cream sauce: Chipotle peppers in Adobo sauce; Adobo sauce (from the can); sour cream; minced garlic;

and finely chopped red onion.

Then prepare a few additional ingredients for saute.

Sliced red bell pepper.

And sliced red onion.

Saute the two together with some canola oil until they are slightly charred.

Then, break up the mingling shrimp, drain them and add them to the saute.

Cook the shrimp until they are just pink and their edges are curled.

Plate it up on your favorite platter.

Place your garnishes of fresh cilantro, lime and lettuce nearby.

Place all of the fixins in a small flour tortilla with the Chipotle cream sauce and really enjoy. This is a yummy one!
