Mid-Week Snack Break: Healthi (er) Zucchini Chocolate Chip Muffins

In my plight to figure out a way to get my kids to eat healthy snacks after school, I offered a recipe here for a healthier version of Zucchini Chocolate Chip Muffins. While Chris, Eli and I liked them very much, Logan was leery of the bits of green in them. However, in other exciting news, Kitchen Artistry accepted this photo on their site! Yay!!
